What's the top and bottom limits for the goods in the game?
From memory, I've achieved the following maximum and minimum prices so far (though they may be wrong);
General goods; 10 to 32
Arms; 60 to 240
Silk; 700 to 2,300
Dream Dust; 6000 to 24,000

General Merchandise: 5-340
Arms: 25-870
Silk: 500-7800
Dream Dust: 3000-24000
In normal play you will not get these extremes very often. Interestingly, this means the best possible profit is on General Merchandise! The limits you mentioned are more likely in normal play.

Is there any way to influence the extremes?
The prices i get at port seem so crazily random that it is difficult (if not impossible) to guage whether something can be sold reasonably profitably without carting it around the ocean for months.
Maybe some indication of supply or oversupply would be helpful?

There is an indication of supply.
There is the alehouse in ports where you can buy the sailors a round and they will let you hear some tips on where to get stuff cheap and sell it expensive. Sometimes you have to buy several rounds to hear what you need.

By percentage, but not by cold hard cash.
Buy 1000 units of GM at lowest price = 5000
Sell at highest price = 34,000
Profit = 29,000
Buy 1000 units of DD at lowest price = 3,000,000
Sell 1000 units of DD at highest price = 24,000,000
Profit = 19,000,000
29 thousand versus 19 MILLION? I know what I'll be trading in.

Well.. if u just started the game, how are u going to get DD with your starting money?

You trade up slowly :) Trading DD will not always be profitable from port to port, so you trade the most valuable commodity which is at a "low" price you can with the cash you have available. Eventually, you'll build up enough cash to fill the fleet with DD, but you usually spend a while getting enougn money to do that first!
